Inspector's notes

Observed TCS food being held in a refrigerated drawer unit on the cook line with an internal temperature of 52*F. Internal temperature registered with an internal probe thermometer. Ambient temperature registered 53*F with a min/max thermometer. TCS food items included cut raw steaks. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC to refrain from placing TCS food in unit until repaired to hold temperatures of 41*F or less. Corrected at time of inspection.

Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection. Corrected at time of inspection.

No County legal action will result from this inspection.Upon arrival walk-in was down. PIC had started moving all TCS items to alternate walk-in coolers. TCS items that remained in the walk-in were placed on time as a control and will be discarded after 6 hours. Technician is on site and actively repairing the walk-in cooler. Establishment has sufficient cooler capacities to operate safely until walk-in cooler is repaired. Inspector will return within 10 days to ensure the walk-in cooler has been repaired.
