#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a container of bean sprouts on the table near the prep-unit on the cook line with an internal temperature of 78*F. Internal temperature registered with an internal probe thermometer. Per PIC the bean sprout have been on the counter since open, >4hrs prior to time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

At time of inspection, observed no date marking on any container with RTE/TCS food inside. Educated PIC that all RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrected at time of inspection.

Inspector's notes

Observed TCS/RTE food being stored in single-use grocery "To-Go" bags in the refrigerated cold holding units. Per PIC the facility would cook food to temperature, cool down, then bag in grocery bags before placing under cold holding. Educated PIC that the use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. PIC relocated all food from single use bags to food safe containers at time of inspection. Corrected at time of inspection.
