Observed TCS food items with internal temperatures between 43-54F in the reach in cooler by the front counter. TCS food items included milk, yogurt, and various dairy based creams. The person in charge stated the items had be placed into the reach in for cold holding less than 2 hours ago.

Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed reach in cooler with minimum ambient temperature of 47F as measured by inspector min/max thermometer. TCS foods stored in the reach in cooler had internal temperatures between 43-54F. Exterior digital temperature display showed a temperature reading of 41F.

Observed cooked corn and melted cheese with an internal temperature of 105F in hot holding unit. Person in charge explains that corn was cooked and washed 30 minutes ago and hot holding unit was just turned on a bit ago. Discussed that hot holding unit should be hot before food is set in there so it could hot hold properly. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed prep refrigerator closest to the office measuring with an ambient temperature of 51 degrees F. Items such as mayonnaise, cooked shrimp, and shredded cabbage measured with internal temperatures ranging between 49-52 degrees. All TCS food items stored in the prep refrigerator were recently stocked or prepared (within past 2 hours) and were placed in alternative refrigeration for rapid cooling. Discussed cold holding and conducting routine temperature checks. Alternative refrigeration available to operate safely. Prep refrigerator will not be used to store TCS food items until in good repair. Correct By: Corrected At Time Of Inspection
