Inspector's notes

Observed all TCS foods in walk-in fridge above 41°F at time of inspection. TCS foods include sliced turkey, ham, roast beef, pulled pork, brisket, chicken, shake mix, sliced tomato, Swiss cheese, provolone, mozzarella, and cheddar, internal temperature 52-54°F taken approximately at 3pm. PIC stated unit was working earlier in the day, with temperature logs showing 37°F at 1pm. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed walk-in fridge to have an ambient temperature of 52.7°F with TCS foods ranging from 52-54°F. PIC showed temperature log of unit being at 37°F at 1pm. Service technician arrived during inspection but unable to repair unit. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to 24 hour re-inspection.
