Observed soft bacon bits with internal temperature of 78F stored at ambient temperature next to the deep fryer. The person in charge stated the bacon bits had been cooked less than 1 hour ago.

The person in charge stated the food items in the prep coolers had been stored in the prep coolers less than 2 hours and moved the food items into the freezer for rapid cooling.
