Establishment also has 3-compartment sink and wash, rinse, and sanitizes knives for trimming of fish. Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one (1) Certified Food Protection Manager (CFPM) on staff. Person in charge indicated no staff members are certified food protection managers. Bathrooms and mop sink had observed maximum internal water temperature of at 100*F and 134*F respectively. Person in charge indicated the bathrooms and the mop sink are on a separate water heater than the meat department/refrigerated warehouse. Establishment must ensure there is water at hand sinks with at least an internal temperature of 100*F and all other sinks must have at least an internal temperature of 110*F. Re-Inspection 10/02/23.
