Observed food employee in kitchen area handle cellphone and proceeded to head to food assembly counter for food work. Hands shall be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Corrective Action: Corrected at time of inspection.

Corrective Action: Corrected at time of inspection.

Physical facility shall be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. PIC instructed food employees to increase cleaning frequency. Establishment shall clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection. Repeat Violation: 2nd Consecutive.

Observed 51°F internal temperature of sliced lettuce and sliced cheese inside prep cooler across from cookline. Per person in charge (PIC), sliced cheese and sliced lettuce were removed from walk-in and placed into prep cooler when establishment opened. Per PIC, food employees left prep cooler lid open less than hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
