PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Establishment shall add consumer advisory statement and special symbol on each menu to every food item on that can be served raw/undercooked prior to re-inspection on 5/1/26. Observed establishment laying to-go bags fully in contact on top of raw beef and raw chicken containers inside walk-in cooler. Observed bags of unwashed/uncooked open rice stored directly in to-go bags on a dry storage shelf. Use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. Food shall be stored in food grade containers/bags. All raw beef and raw chicken stored openly in to-go bags were discarded by PIC at time of inspection. Per PIC, establishment policy is to wash rice prior to cooking step. PIC instructed food employee to begin washing rice. Corrective Action: Corrected at time of inspection.
