Physical facility must be cleaned as frequently as necessary in order to prevent further accumulation of grease. Under the handles of the prep cooler doors, handle of the freezer door, under the prep cooler lids and inside the freezer floor and inside the prep cooler doors along the door gaskets. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals Observed the bucket of chlorine sanitizer next to the three compartment sink with a concentration of over 100ppm. All Chlorine sanitizers must have a concentration between 50-100ppm in order to properly sanitize food contact surfaces.
