Inspector's notes
Observed handwash sink in the back prep area near the 3-compartment sink with no hand drying provision. Person in Charge (PIC) stated that they were out of paper towels and waiting for a delivery later today with paper towels. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC left the establishment and returned with hand drying provisions for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed wet wiping cloths in a sanitizer bucket with quat sanitizer (test strips indicated concentration was less than 150 ppm). PIC stated that the bucket had been filled approximately two hours prior to inspection. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Quat sanitizer should be at a concentration of 150-400 ppm. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
