#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Grab-and-go cooler found with milk and cheeses inside with internal temperature of 47-51*F; temperatures verified with PIC's and inspector's prob thermometers. PIC stated the milk and cheese were placed in the cooler around 7 AM today and discarded them. The grab-and-go cooler will not be used for cold holding of TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below throughout the unit. Possible issue for the cooler is that the bottom shelf extends over the air curtain section, possibly disrupting the air curtain and allowing cold air out near the front of the unit as the very back of the unit was at 41*F according to ambient thermometer. Inspector advised ambient thermometer be placed at the front of the unit where TCS food items may be kept to more closely monitor the area that actually needs temperature control.

The person in charge (PIC) stated the milk was just placed in the unit approximately 20 minutes prior to the inspection. At the time of inspection, the milk was placed in a different reach-in unit to rapidly cool. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
