Observed all sink fixtures in establishment with a maximum water temperature of 85*F. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Hot and cold water under pressure is required at all sink fixtures. Provide adequate hot water at all sink fixtures prior to re-inspection. Corrective Action: Correct within 24 hours.

Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. Effective measures must be taken to eliminate their presence in food establishments. The person in charge indicated they have a routine pest control service/applicator and they will call them out to treat the establishment. Re-inspection 03/07/24. Spoke to operator over the phone; operator indicated they spoke to their accountant and the accountant clarified that the business is run by WASSAN CATERING LLC and FS CATERING LLC and that both LLC's are active and owned by the operator; the Arizona Corporation Commission website confirmed this information. The operator was informed they could disregard the NCIR issued yesterday and continue operating as they have been. A copy of this report was emailed to the operator. No County legal action will result from this inspection.
