PIC stated they will take home the plants to utilize for personal use. Corrective Action: Corrected at time of inspection.

Observed raw chicken and raw beef in reduced oxygen packaging located in standing reach-in refrigerator and reach-in freezer. Per person-in-charge (PIC), vacuum packaging is conducted on-site. PIC states chicken was vacuum sealed over 2 days prior and raw beef was vacuum sealed 1 day prior. PIC discarded chicken and removed raw beef from packaging at time of inspection. Determined establishment does not have a variance in place to conduct reduced oxygen packaging. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home. Additional resources can be found at https://www.maricopa.gov/3978/Food-Variances. Informed PIC that a variance is not required if food products in reduced oxygen packaging conducted on-site are opened within 48 hours. PIC states that they will not perform ROP unless it is for personal use. PIC provided a statement via email confirming they will no longer conduct ROP for consumer use (attached to permit). Observed container of raw in-shell eggs stored above packaged soda cans. Observed raw packaged bacon stored above water bottles, packaged raw sausage above condiments, and packaged raw chicken above condiments. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
