Observed a covered container over 5 inches deep of grilled chicken cooling in the tabletop cooler by the juicer. Internal temperature of the chicken measured between 51- 63ºF. Observed grilled chicken/50ºF from the same batch in the open top coolers. According to the person in charge, the chicken has been cooling since approximately 10AM. TCS foods shall be cooled from 135ºF to 70ºF within 2 hours and cooled from 70ºF to 41ºF within 4 hours. The entire cooling process from 135°F to 41°F or less shall not exceed 6 hours.
