Observed several TCS items (bean sprouts, sliced turkey, sliced tomatoes, diced lettuce) in top left portion of reach-in cooler holding at 44-48*F. Ambient temperature of cooler was reading at 46*F. Per manager, items in cooler had been refreshed approximately one hour prior and were placed into alternate cooler at time of inspection to bring down to 41*F. Ensure cooler is holding at 41*F or below, and all TCS foods in cooler are at 41*F or below- reviewed monitoring and food prep. Corrective Action: Corrected at time of inspection.

Observed establishment using time as a control for cream cheese and cooked stuffing; however no start and discard times were marked on products to indicate when time as a control began. Per manager, items were taken out of cooler to be used for 4 hour window approximately 2 hours prior, but were voluntarily discarded at time of inspection. Reviewed time as a control and proper documentation with manager, and provided guidance. Ensure all TCS items being used with time as a control are properly marked with start/discard time. *Second Consecutive violation. Corrective Action: Corrected at time of inspection.

Observed stuffing containing chicken broth/72°F held at room temperature on the shelf above the prep cooler. According to the person in charge the establishment utilizes 4 hour time as a public health control (TPHC) for the cream cheese and stuffing held at room temperature.

According to the person in charge the stuffing was removed from temperature control at 12PM and the cream cheese was heated above 135°F prior to being to be held at room temperature at 2PM. Predefined Comment: All TCS foods being held under time as a control were properly time stamped at time of inspection (stuffing discarded at 4PM). Created 4 hour TPHC procedures at time of inspection with the person in charge. Corrective Action: Corrected at time of inspection.
