Two pans of cooked beef and cooked vegetable items with 2-10 (todays date) date mark. Cooked beans and a second pan of cooked vegetables with no date marks in the walk in cooler. PIC stated that all items were made three days prior (Friday of last week) and provided proper date marks. TCS food should be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. Corrective Action: Corrected at time of inspection.

The dish machine was ran though additional cycles and primed; chlorine concentration remained at 0-10 ppm, verified with inspector and person in charge's (PIC) test strips. PIC suspects that the chlorine may be expired or became diluted while de-liming the machine earlier in the day. PIC instructed employees to sanitize dishes and equipment in the 3-compartment sink until the dish machine is sanitizing with 50-100 ppm, to ensure proper sanitization.
