The PIC stated that the previous stove that was in the kitchen was replaced and the current unit is not functioning. The kitchen is currently using a homestyle microwave and a homestyle air fryer to heat food, but has no way to hold the heated food at 135 or above. *The food items are sometimes prepared multiple hours before the meal times. EQUIPMENT for cooling and heating FOOD, and holding cold and hot FOOD, shall be sufficient in number and capacity. Ensure that a working NSF (ANSI) approved commercial stove and/or oven is provided.
