Observed food debris buildup on the white surface near the prep tables. Advised PIC this material is porous on some sides and not easily cleanable. PIC stated the meats were sliced between 2-3 hours prior. Advised PIC to cool uncovered before sealing to increase cooling ability. Advised PIC to utilize multiple racks to cool in thin layers before consolidating onto one shelf. PIC uncovered and spread out the cooling foods at the time of inspection.
