Observed accumulation of dust along ceiling tiles next to ceiling vents in warewashing room. Observed small hole in wall next to ice machine in warewashing room. Physical facility shall be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. All floors, walls, and ceilings shall be maintained in good repair and repaired such that it is smooth and easily cleanable. Establishment shall clean physical facility and repair hole in wall prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed sandwiches with TCS ingredients including deli meats and cheeses with an internal temperature between 50-53F being stored in the prep unit towards the front of the establishment. Equipment was malfunctioning at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrected at time of inspection.
