TCS food items such as cooked/raw meats, sauces, bean sprouts stored in the unit measured with internal temperatures ranging between 46-51 degrees F. Per PIC, all of these items had been re-stocked within the past two hours. The items were moved back to walk-in for rapid cooling. Reviewed cold holding and conducting routine temperature checks.
