The cook placed frozen raw hamburger patties on the grill and then, without first washing his hands, handled clean surfaces (adjustment knob on the grill, timer on the steamer, door handle on the walk-in freezer) and went and handled a clean utensil (steel food pan) and then left the kitchen. The cook returned and washed his hands prior to putting his apron, beard net, and cap on and then donned gloves and went and retrieved another clean food pan. The person in charge instructed him to wash his hands after putting on his apron, cap, and beard net. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Core-3-501.15 (B), C: Cooling Methods; Cooling containers. -- Two pans were in the walk-in refrigerator, covered with film wrap, with roast beef at 81°F and 66°F. Per person in charge (PIC), these had been placed in the unit after lunch (approximately 1hr earlier). The corners of the wrap were turned up to allow for air circulation to promote more rapid cooling. After 30min the temperatures were 73°F and 59°F respectively. -- A pan with 3 bean salad (to be used at dinner, per PIC) was resting in ice on the steam table (table not on). The food at the bottom of the pan was 42°F and the food at the top was 61°F. Per pic this food had been placed in the pan from a can 30 min previous.
