Core-3-304.14, C: Wiping Cloths, Use Limitation>>> Observed two sanitizer buckets of quaternary ammonium (quat) near the drive thru window at 0ppm. Person in charge (PIC) made a new batch of sanitizer. Both sanitizer buckets of quat retested at 150ppm. Quat requires a concentration of 150-400 ppm. Discussed with PIC wiping cloths must be maintained in sanitizer with adequate concentration to prevent growth of pathogens in solution that maybe transferred to food contact surfaces and equipment.
