Observed food debris, similar to a stained look, on the containers on the wire racks above the 3-compartment sink, stored as clean. Same with a blender lid. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to ware-washing area to be washed, rinsed, and sanitized at the time of inspection. Core-3-304.14, C: Wiping Cloths, Use Limitation---Observed the wiping cloth quaternary ammonium (quat) sanitizer bucket between the blenders near the front of the store had tested at 0ppm . Discussed with employee to make a new batch. Retest came out to 150ppm. Discussed with person in charge (PIC) the wiping cloth quat sanitizer shall be tested after each batch at 150ppm to 400ppm to effectively clean food contact surfaces.
