Observed self-service salad bar mixed greens and cut romaine lettuce at 52*f degrees. Items placed out within the last hour per PIC. Moved to appropriate location to cool at time of inspection. Back room upright glass fridge with hot dogs, cooked chicken, ham, and sliced cheeses found holding 53*f degrees. Items were in fridge for unknown amount of time. Embargoed.

Observed cut lettuce and cut kale salads in employee self service line at 49 to 52 deg F. Per person in charge items had been placed in unit 1 hour prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
