Observed employee with contaminated raw meat hands dip hand into container of quat sanitizer for 1 second and then proceed to touch clean equipment and directly work with open French Fries to fryer basket. Notified Person In Charge (PIC). Employee was directed to hand wash appropriately. Dipping hands into sanitizer solution for 1 second does not substitute the need for hand washing. ======Employee not washing hands often enough during food preparation to prevent cross contamination.Employee not washing hands between working with raw food and RTE food. Corrective Action: Corrected at time of inspection.
