Inspector's notes

Observed the low-temp dish machine with a chlorine concentration of 0 ppm and at least one rack of recently washed dishes. After running the machine several times and replacing the chlorine bottle, the chlorine remained at 0 ppm. PIC contacted the chemical company during the inspection. The 3-compartment sink will be used to wash/rinse/sanitize until the dish machine has a chlorine concentration of 50-100 ppm. According to PIC, the policy is to test the chlorine concentration prior to use, and document the ppm on the dish machine log. PIC will retrain employees to test and log the chlorine concentration prior to using the dish machine. Discussed the importance of properly sanitizing dishes to destroy pathogens. Corrective Action: Corrected at time of inspection.

According to PIC, pest control treatments are performed monthly. PIC contacted the pest company during the inspection to schedule a treatment. Discussed cleaning the drains, preventing pooling water, and deep cleaning the floors/walls/ceilings as necessary. The PREMISES shall be maintained free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by: routinely inspecting incoming shipments of FOOD and supplies, routinely inspecting the PREMISES for evidence of pests, eliminating harborage conditions etc. Re-inspection 10 days.
