Re-inspection 10 days for violation #38. Discussed ROP fish, which must be removed from the package prior to thawing, while still frozen. Also discussed the expiration dates on the sanitizer test strips.No County legal action will result from this inspection.Observed the area immediately outside of the kitchen, in the dining room, to have had carpet installed where there is a countertop (island) and table that is used for a self-service coffee station and for a buffet with a carving station. According to PIC, the buffet and carving station is setup on weekends and is served by employees. Carpet is not an approved flooring finish in food service areas, and a handwashing sink is required in areas with open food. An onsite meeting can be scheduled to discuss options for the use of this area. Changes to plumbing or food service may require preapproval by Maricopa County. After a discussion with the ED, the buffet service will be discontinued and the carpeted area by the island will no longer be used for food service.

Observed house made chicken, egg and tuna salad, cut melons, and cut lettuce cold holding on a cart in the walk-in cooler with internal temperatures of 44-61F, probe thermometer, verified by person in charge (PIC). According to PIC, the cart was stored on the cook-line during lunch. The containers of the TCS foods were offset to allow airflow into the container and rapidly cool to 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Discussed using the cart to make an ice bath to store the TCS foods during meal service and maintain 41F or less. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
