Observed custard made with eggs cooling on the countertop. Custard had a temperature of 70°F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC moved tins of custard to the walk-in at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed blenders used with milk ingredients being spayed off with water and air dried before use. Per PIC, blenders that come in contact with TCS foods are washed, rinsed, and sanitized once a day. The blenders have not been washed since opening at 12pm, over 4 hours prior. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed custard pudding with egg as ingredient 47*F in the reach in, whole milk 45*F-49*F, milk tea with dehydrated milk 48*F, half and half 46*F, almond milk 45*F, soy milk 44-45*F, sea salt cream 49*F in the stand up cooler. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC was instructed to discard all TCS foods improperly cold held at time of inspection and not use the product for use or resale. Corrective Action: Corrected at time of inspection.
