Inspector's notes

Observed cooked sliced mushrooms in the hot holding unit across from the cookline at 110°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per PIC, mushrooms had been cooked first and placed in the hot holding unit afterward within 2 hours prior. Increased temperature in hot holding unit and mushrooms were brought back up to 135°F. Corrective Action: Corrected at time of inspection.
