Predefined Comment: Swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. Compromised cans were embargoed. Predefined Comment: PIC separated the damaged cans. A designated area will be used to store damaged cans until removal from the establishment. Corrective Action: Corrected at time of inspection.

TCS foods found in Ture refrigeration prep cooler (i.e. - spinach, mozzarella cheese, shredded cheese, cut lettuce) and front counter True cooler (i.e. - ranch dressing) at internal temperatures ranging from 48*F - 51*F. Ambient air temperature of food prep cooler at 47*F and counter cooler at 50*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, foods found in units were recently restocked within the last hour. All TCS foods improperly cold held were relocated to walk-in refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
