Facility received burrito lunches for students from Cafe Rio that had a temperature of 96 - 110 °F. No hot boxes, coolers or time/temperature logs kept with product. Facility accepts and holds product in hot hold units until service time for lunch. No times for preparation provided by vendor. As per vendor all product was made at 9:30 am. Reviewed with person in charge proper cold holding, hot holding, time as control processes and how to check thermometer calibration using ice water at 32 °F. Instructed person in charge that at 12:30 pm out of temperature product must be discarded if not consumed in that time. Correct By: Corrected At Time Of Inspection
