Maximum temperatures reached at mop sink is 103 degrees, three compartment sink 100 degrees and handsinks throughout kitchen 85 degrees. Hot water capacity has been limited due to only 1 of 2 instant water heaters functioning. Instructed person in charge to have water heater replaced/maintained so as to provide a minimum of 110 degrees for warewashing and 100 degrees for handsinks at all times of operation. Instructed person in charge to correct within 9 days 10/11/24.
