Observed cooked beef soup and sauce containing cooked vegetables in walk-in cooler with no date mark. Person in charge stated that foods were made the day prior. Ready-to-eat, time/temperature control for safety (RTE/TCS) foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Observed cooked rice, cooked chicken mole tamales, and cooked shredded chicken with internal temperatures between 45F -49F in the walk-in cooler. The cooked rice was in sealed plastic bags with date markings of 3/12, more than 6 hours. The cooked chicken mole tamales were individually wrapped and tightly packed in plastic bin with a date mark of 3/11, more than 6 hours. The cooked shredded chicken was in several stacked plastic containers with sealed lids and had date marks of 3/7 and 3/11, more than 6 hours.
