Observed multiple clear food pans, used for various TCS and non TCS food items with food debris, labels, and pooled water stacked on each other and stored as clean on equipment racks above the cook/prep line and next to the dishwash machine. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Inspector's notes

Observed TCS food items such as cut tomatoes and yogurt with internal temperatures between 49°F and 55°F in front area prep cooler. Ambient air temperature measured 51.6°F. Verified temperatures with PIC. Per PIC, a line temperature occurred about 2 hours prior. Discussed using properly working cooler for all TCS food items until prep cooler has been serviced and maintains an ambient air temperature of 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
