Observed multiple covered and stacked containers of cooked ground beef and cooked re chili meat in walk-in cooler, items measured 59-65 degrees F internally. Employee said that they had been prepared nearly 6 hours prior. Items were uncovered, stirred and moved to a cooler rack to finish cooling more efficiently. Ground beef was spread onto a baking sheet. Please ensure food items are cooled in shallow uncovered containers (to facilitate the most efficient heat transfer) until they reach 41 degrees F.
