Establishment is utilizing reduced oxygen packages (vacuum packages) for various raw and cooked meats. Items had only been packaged for less than 48 hours and were removed from packaging at time (items were intended to be packaged for longer). Operator was provided with variance information and will discontinue ROP until a variance is obtained. Corrective Action: Corrected at time of inspection.
