Inspector's notes

Observed hot dog wrapped in foil in warming cabinet at 120 °F. Except during preparation, cooking, cooling or when time is used as a control, all hot held TCS foods must be maintained at 135°F or above. Hot dog had been placed in cabinet less than two hours prior as per person in charge. Hot dog was discarded at time of inspection. Discussed adjusting temperature of cabinet and checking temperatures with probe thermometer with person in charge. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked hot dogs, cooked bratwurst, sliced turkey, and sliced cheese in prep cooler at 46-50 °F. Observed minimum ambient air temperature of 50 °F in cooler as measured by min/max holding thermometer. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods except for sliced cheese had been placed in cooler three hours prior. Establishment discarded cheese at time of inspection and relocated other TCS foods to an alternate functioning refrigeration unit. Corrective Action: Corrected at time of inspection.
