Inspector's notes

Observed basil, rosemary, and mint garnishes stored in glasses without a lids/covers on the bar counters. Observed whole citrus used for peels/ zesting in baskets on the counter. For outdoor bars, All ice bins and condiment containers must be provided with tight-fitting, sliding covers. PIC moved garnishes at time of inspection. Discussed obtaining containers with tight fighting lids if garnishes and fruit are stored on the counter. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed no disclosure/asterisk next to the Canyon Poke Bowl (raw ahi tuna) on the menu. The disclosure is satisfied when items are asterisked to a footnote that states that the items are served raw or undercooked and may contain raw or undercooked ingredients. The intent of a consumer advisory is to ensure that all consumers are properly informed about the increased risk of eating raw or undercooked animal foods. Person in charge added asterisk next to the Canyon Poke Bowl on the menus at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed an unlined copper mule mug on the bar counter. Copper and copper alloys such as brass may not be used in contact with a food that has a pH below 6 such as vinegar, fruit juice, or wine. Copper is not approved for use in certain alcoholic beverages. When copper and copper alloy surfaces contact acidic foods and juices, copper may be leached into the food product. PIC removed the mule mug from bar area at time of inspection. Discussed utilizing mule mugs with stainless steel lining
