Observed >700ppm DDBSA and >1875ppm Lactic acid concentration of sink and surface sanitizer solution in sanitizer compartment of 3-compartment sink. Per person in charge (PIC), break in policy (sanitizer compartment did not have enough fresh water in compartment) was the root cause of the improper sanitizer concentration. Sanitizer shall be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. PIC diluted sink and surface sanitizer solution to approved concentration at time of inspection. Corrective Action: Corrected at time of inspection.

When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food.
