-- In walk-in refrigerator, the following TCS items were above 41°F: grilled onions (54°F-56°F), American cheese (53°F), Swiss cheese (50°F), pre-cooked char-broiled chicken (57°F-58°F), raw angus beef patties (56°F-57°F), raw chicken breast tenders (57°F), raw chicken breast fillets (55°F-57°F), omelet blend with crumbled sausage, bacon, ham and cheese (45°F-51°F), salsa (54°F-55°F), and guacamole (55°F). The char-broiled chicken, angus beef patties, chicken breast tenders and fillets were thawed/prepped on 5/21/25. All other TCS had been prepared/pre-portioned 2 hours before the inspection (6:00 AM). At the time of inspection, the char-broiled chicken, angus beef patties, chicken breast tenders and fillets were voluntarily discarded. All other TCS items were moved to refrigeration unit to rapidly cool to 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
