On table near grill, containers of broth, nacho cheese, and beans measured an internal temperature ranging from 76-80'F. Per person in charge, foods had been taken out of steam table and end of previous day and left to cool down on table overnight. As food had not cooled within proper time frame it was embargoed. Discussed with person in charge efficient cooling methods, such as an ice bath, to rapidly cool foods before placing into coolers overnight. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling.
