Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Spoke with PIC about unauthorized individuals in food prep, food storage, or warewashing areas. Observed dishwasher test at a concentration level of 25ppm for Chlorine sanitizer with active warewashing occurring. PIC removed dishes from dishwasher to be properly sanitized at three-compartment sink at time of inspection. PIC closed off dishwasher until dishwasher can be repaired. Chlorine sanitizer must be between a concentration of 50ppm to 100ppm. Discussed with PIC the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

Observed opened containers of dairy milk, dairy butter, sour cream, cream cheese, mozzarella cream cheese and heavy cream with no date marking in walk-in unit. PIC stated all items were opened to be used for a catering order on 08/31. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
