Observed no probing thermometer for TCS food items at the time of inspection. Per PIC and volunteer, establishment does not have a probing thermometer for TCS food items. A TEMPERATURE MEASURING DEVICE with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin FOODS. Ensure establishment obtains probing thermometer by reinspection on 9/25/26. Can be verified through electronic means. Corrective Action: Correct prior to re-inspection.

Observed bricks of butter stored in unplugged fridge. Butter is a TCS food. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Butter was removed and thrown away at time of inspection. Corrective Action: Corrected at time of inspection.
