In the walk-in cooler, observed tomato sauce mixtures/57F and in containers of 12 inches deep. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per PIC, the sauce was prepped within safe cooling time parameters, and it was transferred to shallow containers to facilitate the cooling process. Further testing of the sanitizer dispenser at the 3-compartment sink showed inconsistent dispensing, first <50ppm quat then >500ppm quat. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. PIC replaced sanitizer with a 50/50 solution of dispenser sanitizer and water into sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Warewashing machine must supply enough sanitizer to properly sanitize food contact surfaces. PIC called maintenance to fix the machine at time of inspection. Person in charge explained that they pulled the wings out of the walk in around 60minutes before taking a temperature and had just been placed into reach in. Person in charge informed temperature sensitive foods must remain at 41*F. Person in charge placed chicken wings into walk in cooler to rapidly cool at time of inspection.
