Observed ham and cheese croissants for sale the PIC stated was from another food establishment without a mark of inspection. Ham and cheese croissants were observed as one continuous piece of croissant that has been partially cut to include ham. All food must be obtained from an approved source as defined by law. A true embargo was placed on all food from unapproved source at time of inspection. PIC was instructed the embargoed food may not be sold, used, donated, discarded, or moved without notifying the department. As per PIC, the establishment uses time as a control for their dairy products but had no time indicating when the dairy products were taken out of temperature control. Per PIC, the milk products were taken out less than 2 hours prior to the inspection. PIC wrote the time on the dairy products. A food establishment, when using time as a control, must follow their written procedure; and mark when a TCS food is taken out of temperature control.
