Inspector's notes

Observed cut lettuce 48*F, arugula 45*F, cut tomato 44*F, shredded cheese 48*F, coleslaw 46*F in the cold table on the cookline at the time of inspection. Also observed pickled onion made in house previously hot brined at 50*F by the server station and house made ranch 44*F-49*F in the cold table by the server station. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC put in work order for prep table on the cookline. All TCS foods out of temperature had been out of temperature for less than 4 hours and were put in alternative refrigeration units at the time of inspection.
