Observed employee beverage stored on the ledge above the back prep table. Observed employee beverage in warewashing area stored on shelf above clean dishes. To ensure food safety, prevent physical contamination and the transmission of disease; employee eating, drinking, beverage storage, and using tobacco must be done in an approved area. PIC moved employee beverages at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
In the cold table at the service line, observed a small container of diced cooked ham, a small container of diced cooked sausage, and a medium container of sliced tomatoes with internal temperature of 52-56 degrees F. Person in charge (PIC) stated items were prepared about an hour prior and placed in cold table after prep. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC moved TCS items to walk in at time of inspection to properly cool to 41 degrees F. prior to placing on service line. Corrective Action: Corrected at time of inspection.
