Observed recently prepped cut lettuce and tomatoes with temperatures between 47 to 50*F cooling in tightly covered containers in the walk-in cooler. Per PIC and date marks lettuce and tomatoes were cut 2 hours prior to inspection. Person in charge (PIC) loosened the covers. Discussed keeping containers loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food. Inspector's notes

Observed several metal pans and a hot holding tray with food debris and oil residue on the food-contact surfaces. The equipment is used to store TCS foods and was stored as clean on the clean rack in the ware wash room. PIC placed the soiled equipment in the area to be rewashed. Equipment food contact surfaces and utensils shall be clean to sight and touch. TCS food debris remaining on clean equipment is a potential source of contamination for foods that come into contact with the equipment. Corrective Action: Corrected at time of inspection.
