Inspector's notes

Employee observed wearing dish gloves, handling dirty dishes, and placing them in a dish rack for the dish machine. The same employee then opened the dish machine, removed cleaned dishes, and began placing clean bowls and plates onto stacks of other clean plates and bowls. PIC had the employee rewash all the plates and bowls. Employee was instructed to wash their hands prior to handling clean dishes and after handling dirty dishes.

Inspector's notes

TCS food items including milk, cottage cheese, salsa, sour cream and cream cheese found with internal temperatures of 41-50*F in reach-in cooler near soda fountain. PIC stated they had not checked the fridge today and discarded the items that had been in the cooler longer than 4 hours. Items that were still at 41*F or below and also the items that were in the cooler less than 4 hours were moved to the walk-in for cooling and continued cold holding. The ambient temperature for the reach-in cooler was 50*F during inspection. The reach-in will not be used for cold holding TCS food items until it has been replaced/repaired and able to maintain an ambient temperature of 41*F or below. Discussed frequent opening during meal service which may have cause the cooler to rise in temperature: alternative means of cold holding include ice baths for items frequently access so that fridge doesn't have to be opened as often. Time as a control is also an option for items that may be used up during meal service. Corrective Action: Corrected at time of inspection.
