PIC stated cream was prepared previous evening and held under temperature control. Embargoed, PIC discarded. Discussed use of high-temperature dishwasher for the insulated dispensers and carafes, verifying the dispensers and cream are properly cold before pressurizing.

Of note: Establishment is using 5 hour time as a control for cold brew coffee during peak hours. PIC stated the cold brew is kept cool and is discarded after 5 hours. Advised PIC to refer to official policy regarding time as a control. Advised PIC to utilize a 4 hour timestamp or no more than 6 hours IF they are able to keep the cold brew below 70*F. Advised PIC they may also keep under refrigeration. Observed the cold brew at 61*F that had been out for 2.5 hours per time stamp.
